Chocolate Avocado Mousse

Chocolate makes everything better.  Having a bad day?  Chocolate.  Tired?  Chocolate.  Meeting a friend for coffee?  Add chocolate into equation.  Cold outside?  Hot chocolate.  I know food isn’t supposed to be looked at for comfort, but I’m human…and female.  ;)   That’s just the way it goes sometimes.  I will do everything I can to make sure it’s healthy, and not in excess, so I’m constantly looking for new ways to enjoy something chocolate flavored in a super healthy way.

After posting about all the additives in store bought chocolate pudding mix, I immediately went looking for some healthy alternatives.  One thing kept popping up — vegan chocolate pudding using avocado.  They were all basically the same – avocado, agave, chocolate, and vanilla extract.  I was a little apprehensive, but I decided to give it a go.  Using just the basic ingredients I threw it together.  It was good, but I wasn’t all in just yet.  Then, I thought of this chocolate bar I had at least a year ago — chocolate with orange and almond.  It was the best chocolate bar EVER.  I loved the subtle taste of citrus, and a little crunch from almonds.  So, I added some orange zest and some chopped almonds to the chocolate avocado mix.  Now we’re talking!  This really is amazing!

Even if you do not like avocados, promise me you will at least try this one time. Promise?  This is so much better than I ever thought it would be, and so easy to make!  Much better than slaving over the stove, or baking.  Just mix in a food processor, place in the refrigerator for about an hour so it can firm up a bit, then dig in.  I served it in small shot glasses, which was the perfect serving size.

Ingredients
  • 2 avocados, peel and pit removed
  • 1/4 cup cocoa powder
  • 1/4 cup honey or agave (I prefer raw honey)
  • 1/2 tsp vanilla extract
  • zest of 1/2 an orange
  • pinch of salt
  • top with chocolate chips and chopped almonds
Instructions
  1. Add the avocados to a food processor and mix until smooth.
  2. Add the remaining ingredients and mix well.
  3. Scoop out into small bowls or shot glasses and place in the refrigerator for 1 – 2 hours.
  4. Top with chopped almonds and chocolate chips, optional.
